Seaweed bread

Why didn't I know?

Why didn't anyone tell me?
Why didn't anyone convince me?

Why did I ever hesitate to follow this recipe of bread with seaweed in it!

The answer isn't very difficult; I'm just one of those people always leaving the pieces of seaweed in that delicious stock with salmon when we dine at a Japanes restaurant. You simply don't put ingredients in your bread that you dislike and because of the lack of recipes of this bread on the internet I pressume I'm not the only one.

Even during the proces of baking this bread I had my doubts; shouldn't I bake an extra different bread just in case.....................?

How wrong was I. The seaweed in this bread makes the bread taste very refined without the specific taste of seaweed. Maybe small children would object against 'those green little things in it' but I wanna bet you like this bread if you ever dare to taste it.


Seaweed bread (Richard Bertinet: Dough)
250 gr. white bread flour
250 gr. wholemeal four
10 gr. fresh yeast (or 5 gr. instant yeast)
10 gr. salt
340 ml. water
7 gr. dehydrated wakame seaweed weigehd before soaking (20 minutes soaked in warm water, drained and cut in small pieces)

Mix both the flours in a big bowl or container and rub the yeast in it. Add the water and mix the ingredients till none of them is dry anymore. Give the dough 25 minutes for autolyse.

After the autolyse: add the salt and knead the dough 7 minutes. At the end of the mixing; add the seaweed and continue mixing until it is evenly distributed through the dough. Shape the dough into a ball and leave it in a well oiled container to prove (this will take 45 minutes). After this, gave it two businessletter turns and leave it again to prove in 45 minutes. Repeat this once more. This will give a nice airy structure.

Turn the dough out onto a lightlt oiled working surface and form it into a banneton or oval bread. Roll it carefully through the semolina and leave it (covered) for the final proof till almost doubled in size. In the meantime preheat the oven to 480 dgr. F. (250 dgr. C.).

Turn the loaf on a bakingsheet and slash it like you're used to. Bake the loaf 45 minutes until well coloured. Remove it from the oven an leave it to cool down on an iron rack.

Oatbran bread

Staying for a full weekend in Denmark and enjoying the company of old friends (and making new friends) was wonderful. The different kinds of homebaked rolls made by the male host were a big surprise and tasted very well.

Shopping in supermarkets in other countries is one of my favourite things. There are always ingredients I've never seen before and that I'm willing to use.

I was stunned by all the different kind of flours you can by at the local supermarkets in Denmark. All kinds of ryeflour (ofcourse) and oat. With just enough room for some flour in my suitcase, I took a few kilo's with me to Holland.


The first flour I wanted to experiment with is called 'havreklid'. Looking on the internet showed me it's nothing else than oatbran but on the other hand; I'd never tried it if I hadn't seen this in Denmark. Translating the recipe at the back of the package wasn't very difficult and with a few adjustments (using a poolish) the result was a very nice tasting and chewy bread.

Oatbran bread

Poolish
50 ml water lukewarm
50 gr. breadflour
4 gr. instant yeast

Dough
all of the poolish
100 gr. oatbran
350 gr. breadflour
250 ml milk; lukewarm
8 gr. instant yeast
25 gr. oil (I've used sunflower oil)
1 tsp. salt
1 tsp. honey

2 tbsp. semolina

Combine the ingredients for the poolish and whisk it 2 minutes with a wooden spoon. Put it (covered) for one night in the fridge.

The next day: combine in a big bowl the poolish and the milk. Whisk it till all the poolish is solved in the milk. Add the oatbran, breadflour, yeast, oil and honey and combine it just till the're nog dry ingredients any more.
Leave it, covered, for 25 minutes for autolyse. Add the salt and knead the dough 7 minutes.

Put the dough into an oiled container and leave it covered for 50 minutes. Take the dough out of the bowl and lay it on an oiled working surface. Give the dough two businessletter turns and put it back in the container again. Repeat this after 50 minutes and leave the dough again in the oiled container for 50 - 60 minutes. By this method you get an airy bread.

Take the dough out of the container and form into a tight ball or an oval bread. Roll it through the semolina and lay it (seamside downwards) on the bakingsheet or in the clay pot or romertopf.

Give the dough app. 40 minutes for the final proof (until almost doubled in size). In the meanwhile: preheat the oven to 425 dgr. F. (220 dgr. C.) Slash the dough and bake it in 40 minutes till you hear a hollow sound when you tap on the bottom of the bread. Using the romertopf or clay pot you remove the upper part of the pot after 20 minutes baking!

Een lang weekend in Denemarken in gezelschap van oude vrienden en (inmiddels) nieuwe vrienden was heerlijk. De verschillende broodjes die door de gastheer waren gebakken, waren een verrassing en smaakten prima.

Een van mijn favoriete bezigheden in het buitenland is het shoppen in een supermarket. Er zijn altijd wel zaken die ik nooit eerder heb gezien en waar ik graag mee experimenteer. Ik was vooral aangenaam verrast door het grote assortiment bloem in de Deense supermarkt. Natuurlijk allerlei soorten roggebloem en haver. Met nog net wat ruimte over in mijn koffer heb ik een paar kilo mee naar Holland terug genomen.

Het eerste bloem waar ik mee aan de slag wilde, heet 'Havreklid' . Na een zoektocht op internet blijkt dit gewoon haverzemelen te zijn maar aan de andere kant; ik zou er nooit iets mee gedaan hebben als ik het niet in Denemarken had gekocht. Ook al verwachtte ik niet dat het zemelen zouden zijn.

Het recept op de achterkant van het pak bleek niet moeilijk te vertalen en na een paar kleine aanpassingen (zoals het gebruik van een poolish) bleek het resultaat een heerlijk smaken brood met een prettige structuur.


Brood met haverzemelen

Poolish
50 ml handwarm water
50 gr. broodmeel
4 gr. instant gist

Deeg
de poolish
100 gr haverzemelen
350 gr. broodmeel
250 ml. handwarme melk
8 gr. instant gist
25 gr. olie (hier heb ik zonnebloemolie gebruikt)
1 theelepel zout
1 eetlepel honing

2 eetlepels semolina of griesmeel

Meng alle ingredienten voor de poolish and klop dit 2 minuten met een pollepel. Zet het afgedekt voor een nacht in de koelkast of op een andere koele plek.

De volgende dag: meng in een grote kom de melk en de poolish. Klop het even totdat de poolish en de melk goed gemengd zijn. Voeg nu de haverzemelen, broodmeel, gist, olie en honing toe en meng dit net zolang tot er geen droge ingredienten meer zijn. Laat het nu afgedekt 25 minuten met rust voor de autolyse. Voeg hierna het zout toe en kneed het deeg nu ongeveer 7 minuten.

Leg het deeg in een geoliede kom en laat het afgedekt ongeveer 50 minuten rijzen. Haal het deeg uit de kom, leg het op een met olie ingesmeerd werkvlak en geef het een zogenoemde dubbele businessletter turn. Leg het deeg hierna weer terug in de geoliede kom. Herhaal dit na 50 minuten en leg daarna weer het deeg terug in de kom om het er weer na 50 tot 60 minuten uit te halen. Dit steeds vouwen lijkt erg tijdrovend maar je krijgt er een heerlijk luchtig brood van een het komt de smaak ook ten goede omdat het deeg alle tijd krijgt.

Haal nu het deeg voor de laatste keer uit de kom en vorm er een strakke bal van of een ovaal brood. Rol het voorzichtig door de semolina of griesmeel en leg het (met de naad naar beneden) op een bakplaat of in de romertopf. Laat het nog onveer 40 minuten rijzen (tot het net niet verdubbeld is in omvang). In de tussentijd de oven voorverwarmen op 250 gr. C.

Snijd het deeg in zoals je gewend bent en bak het in de oven (40 minuten) tot er een hol geluid komt als je onder op de bodem klopt. Bij gebruik van de romertopf moet na ongeveer 20 minuten het deksel eraf gehaald worden.

Catching the sun in a jar

Although we're still enjoying the spring, it won't take long before the summer starts. Summer; that means an abundance of red fruits as strawberries and raspberries but also tomatoes with which taste like tomatoes. In Holland, they're available throughout the whole year but a lot of them taste like water.

During the summer, when you're lucky, you can buy small tomatoes like Tasty Tom with a delicious taste. I managed this weekend to buy a box with small tasty tomatoes and dried them in the oven. Still warm and just coming out of the oven I just couldn't resist to try a few; the taste was concentrated (just enough) and delicious. A few of them can give a nice extra flavour to your salad, sauce, focaccia or pizza.


Oven dried tomatoes (R. Bertinet: Dough)
a box of small ripe tomatoes (250 gr.)
a tsp. fleur de sel (or fine sea salt)
freshly ground black pepper
tsp. castersugar
a couple of pinches dried herbes de Provence
good quality olive oil

Preheat the oven to 210 dgr. F. (100 dgr. C.). Halve the tomatoes and lay them on a baking tray on their skin-side. Sprinkle the salt, pepper, sugar and herbes over the tomatoes. Put the tray in the oven for 2 hours until the tomatoes are dry and soft. Put them in a sterile jar and cover them with the olive oil. this way you can keep them for a few weeks.


Of course you can also use them at once in soup, salad or bread.

Pizza marguerita with peppadews

Two years ago, I went with my oldest one for one day to London just to look at a painting of Rubens in the National Gallery.


In the middle of the night we drove to the Hoek van Holland for a quick trip with the catamaran. It stormed that night and most of the passengers were seasick. The fact that we walked a couple of times to the snackcorner to get a plate of food (pasta with sauce) didn't help them.


The painting 'The judgement of Paris' was impressing and after wandering through the museum there was enough time for Harrods and a lunch. Although there are enough restaurants in London it still took some time to find one with a table for us. It was a very small restaurant and outside you could smell the tomato sauce and the herbs.The interior looked like the catacomben but in a modernised way. The food was just perfect; a crispy pizza marguerita with fresh basil and mozzarella di buffola on a tasty tomato sauce.

I've never forgotten that trip and those pizzas. In that small restaurant I've learned what it means to use just a few ingredients but of perfect quality. It's something I always try to practise when making my own pizzas.


Pizza marguerita with peppadews (makes 3)

pizza dough (Jamie Oliver: Jamie's Italy)
400 gr. bread flour
100 gr. semolina
1/2 tbsp. salt
7 gr. instant yeast
1/2 tbsp. cane sugar
325 ml. water tepid
1 tbsp. good olive oil

Combine all the ingredients for the dough in a big bowl. Knead it for 10 minutes till you get a satin soft and smooth dough. Leave it covered for 15 minutes. Make a ball for every pizza you're going to make. this amount of dough is enough for 3 pizzas.

Topping
good quality tomato sauce
fresh basil
2 mozzarella di buffola
a few peppadews
freshly grated parmesan cheese
1 tsp. good quality olive oil


Cover each pizza with the topping ingredients, sprinkle just a little bit olive oil over them and bake them in the oven (one by one) in 7 to 10 minutes (480 dgr. F./ 250 dgr. C.).

Het is nu zo'n twee jaar geleden dat ik met onze oudste voor één dagje naar Londen ging om een schilderij van Rubens in the National Gallery te bewonderen. Midden in de nacht gingen we op pad naar de Hoek van Holland voor een korte reis met de catamaran.

Juist die nacht stormde het en de meeste passagiers werden ziek. Het feit dat wij samen af en aan liepen met borden heerlijk geurend eten heeft daar denk ik geen goed aan gedaan.


Het schilderij Het Oordeel van Paris was schitterend en indrukwekkend vanwege de vele details als je beter kende en op de hoogte bent van het verhaal. Na een korte zwerftocht door het museum was er nog tijd genoeg voor een bezoek aan Harrods en een lunch.

Hoewel er in Londen nu niet bepaald een gebrek is aan restaurants, hebben we toch nog behoorlijk lang moeten zoeken eer wij ergens een vrij tafeltje hadden gevonden. Het was een erg klein restaurantje en buiten kon je al de heerlijke tomatensaus en kruiden ruiken. Van binnen leek het op catacomben maar dan wel gemoderniseerd. Het eten was verrukkelijk; een flinterdunne krokante pizza marguerita met verse basilicum, mozzarella di buffola en een lekkere tomatensaus.


Het reisje met mijn dochter en de lekkere pizza vergeet ik niet zo snel. In dat kleine restaurant lieten ze zien dat je maar een paar ingredienten van goede kwaliteit nodig hebt. Het is iets wat is sindsdien altijd in mijn achterhoofd heb als ik zelf pizza's maak.

Pizza marguerita met peppadews

pizza deeg (Jamie Oliver: Jamie's Italie)
400 gr. tarwemeel
100 gr. semolina of griesmeel
1/2 eetlepel zout
7 gr. instant gist
1/2 eetlepel rietsuiker of basterdsuiker
325 ml. lauwwarm water
1 eetlepel goede olijfolie

Vermeng alle ingredienten voor het deeg in een grote kom. Kneed het deeg ongeveer 10 minuten tot je een mooi satijnachtig glad deeg krijgt. Laat het afgedekt 15 minuten rusten. Als je pas veel later de pizza's wil maken, kun je het nu ook in de koelkast bewaren. Verdeel het deeg in evenveel bollen als je pizza's gaat maken. Deze hoeveelheid is geschikt voor drie pizza's van normale omvang.

Beleg
goede kwaliteit tomatensaus
verse basilicum
2 mozzarella di buffula
een paar peppadews
vers geraspte parmezaanse kaas
1 theelepel goede kwaliteit olijfolie (extra vierge)

Bedek elke pizza met de ingredienten voor het beleg. Druppel er een klein beetje van de olijfolie overheen en bak ze in de oven in 7 tot 10 minuten. (250 gr. C.)

Cherry crumble pie

Sometimes there isn't much time for making a pie or a cake but the cravings can't be ignored. One of my favourite recipes is this cherry crumble pie. It's not much of an effort to take care all the ingredients are on stock.


Cherry crumble pie
125 gr. self rising flour
125 gr. light brown caster sugar
65 gr. oatmeal (the one you use for the porridge)
100 gr. butter; melted
1 can cherry piefilling (430 gr.)
1/4 tsp. cinnamon
1 tsp. lemon juice

Preheat the oven to 350 dgr. F.(175 dgr. C.)

Combine the self rising flour, caster sugar and oatmeal. Add the melted butter and rubb with your fingertips till you get a crumble dough. Use 2/3 of this mixture to cover the bottom of a round baking tin.


Stir the cinnamon and lemon juice through the cherry piefilling. Spread this over the layer of crumble dough. Take the remaining crumble dough and sprinkle this over the piefilling mixture. Bake the pie in the middel of the oven in 50 to 60 minutes golden brown. Leave it for cooling down on an iron rack. Enjoy it with a big spoon full of whipped cream.

The Miller's multi-grain loaf

The origin of this recipe, French Mixed Grain Bread, comes from the weblog 'in the kitchen with Arden'. I've already used a lot of her bread recipes with good results. The most important changes of the original recipe are the addition of the soaker and of my active starter Elvis.

My changes for the method were the longer rising periods with the folding (businessletter turns) and the use of the Romertopf (clay pot).

The result: a tasty loaf with still some bite because of the soaker. The crust turned out very nice and crispy. The name of the bread refers to the miller where I buy most of the flours and grains.


The Miller's multi-grain loaf
Poolish
60 ml. lukewarm water
1/2 teaspoon instant yeast
60 gr. bread flour
1 tbsp. active starter (100%)

Soaker
2 tbsp. coarse rye
2 tbsp. coarse wheat
1 tbsp. millet
4 tbsp. hot water

Dough
1 tsp. instant yeast
480 gr. bread flour
35 gr. rye flour
40 gr. whole wheat flour
2 tsp. salt
300 ml. lukewarm water
the poolish
the soaker

Glaze
1 eg yolk
1 tbsp. milk
2 tbsp. sesame seeds

Start the evening before the baking of the bread by making the soaker and the poolish.

Poolish: combine in a bowl the flour and yeast. Add the starter to the water and whisk it wit a spoon. Add the water/starter mixture to the flour and yeast and stir it with a wooden spoon. Cover the bowl and leave it in the kitchen till the next morning.

Soaker: combine the grains and the hot water in a cup or small container. Leave it in the kitchen till the next morning.

The next day: combine the poolish with the water in a big bowl. Add the yeast, bread flour, rye flour, whole wheat flour and mix it till all ingredients are combined. Cover the bowl and give it 20 minutes for autolyse.

Add the salt and the soaker and knead the mixture in 7 minutes till you get a soft but still a bit sticky dough. Put the dough in a oiled plastic container for an hour. Take the dough out of the container and give it two businessletter turns on a oiled working surface. Put it again in the container for an hour. Take the dough for the second time out of the container and give it again two businessletter turns. Put the dough in the container for the last time. After an hour the dough will be doubled in size.

Take the dough out of the container and form it into a banneton. Roll it through semolina to prevent sticking to the clay pot. Put the dough in the clay pot and leave it covered for a final rise till almost doubled in size. At the end of the rising time, preheat the oven to 425 dgr. F. (220 dgr. C.).

Just before placing the clay pot in the oven, glaze the loaf with the egg yolk and milk mixture and sprinkle sesame seeds on it. Score the loaf and wet the upper part of the clay pot. Put the closed pot in the oven for 20 minutes. Take the upper part off the pot and bake the loaf for another 20 minutes in the oven.

Take the pot with the loaf out of the oven and put it on a towel and not direct on a cold working surface. After 5 minutes you can take the loaf out of the pot and leave it on an iron rack to cool down completely.

Het originele recept, French Mixed Grain Bread, is afkomsting van de weblog Uit de keuken van Arden. De belangrijkste wijzigingen die ik heb aangebracht betreffen het toevoegen van een soaker en wat van mijn actieve zuurdesem Elvis. Een andere wijziging betreft de bereiding van het brood: ik heb het deeg langer laten rijzen en gevouwen en als laatste is het gebakken in de Romertopf.

Het uiteindelijke resultaat: een lekker smaakvol broodje met een heerlijke beet en een knapperige korst. De naam van dit brood verwijst naar de molenaar waarvan ik het grootste deel van mijn meel en granen koop.

NB: de theelepel en eetlepel uit dit recept komen overeen met de Nederlandse maten. Ik heb een poging ondernomen om de gist te wegen maar het gewicht is zo gering dat ik niet op de weegschaal durf te vertouwen.

Meergranen brood van de Molenaar
Poolish
60 gr. handwarm water
1/2 theelepel instant gist
60 gr. broodmeel
1 eetlepel active starter (100%)

Soaker
2 eetlepels gebrokken rogge
2 eetlepels gebroken tarwe
1 eetlepel gierst
4 eetlepels heet water

Deeg
1 theelepel instant gist
480 gr. broodmeel
35 gr. roggemeel (ik heb grof gebruikt en dat is prima bevallen)
40 gr. volkoren tarwemeel
2 theelepels zout
300 ml. handwarm water
de poolish
de soaker

tarwegries of semolina
1 eigeel
1 eetlepel melk
sesamzaadjes

Je kunt de avond voorafgaand aan het bakken van het brood starten met het maken van de poolish en de soaker.
Poolish: vermeng in een ruime kom het meel en de gist. Vermeng de starter met het water en klop het even met een garde. Voeg het vocht toe aan het meel en gistmengsel. Roer alles even goed door met een pollepel en laat het afgedekt de hele nacht op de aanrecht staan.
Soaker: meng al de ingredienten voor de soaker en zet ze weg op de aanrecht tot de volgende dag.

De volgende dag: meng de poolish en het water in een grote kom. Voeg vervolgens het broodmeel, de gist, roggemeel en volkoren tarwemeel toe en vermeng alle ingredienten tot het een vochtige brij is. Bedek de kom en laat de brij 20 minuten met rust voor de autolyse.

Voeg het zout en de soaker toe en kneed 7 minuten tot er een zacht maar nog iets plakkerig deeg ontstaat. Leg het deeg in een geoliede plastic container en laat het afgedekt een uur rijzen. Smeer de aanrecht met wat neutrale olie in een leg het deeg er op. Druk het voorzichtig in de vorm van een rechthoek en vouw deze in drieen (dit is één businessletter turn) . Draai het geheel 1/4 slag en herhaal deze handeling (dit is de tweede businessletter turn). Leg het deeg weer terug in de container en laat het weer een uur rijzen.

Haal het deeg uit de container en vouw het weer twee keer. Leg het nu voor de laatste keer in de container tot het in ongeveer een uur tijd in volume is verdubbeld. Als de keuken vrij koud is kan dit iets langer duren; geef het deeg die tijd want het zal je belonen met een heel luchtig brood.


Haal nu het deeg voor de laatste keer uit de container en vorm het tot een banneton of een ovaal brood. Rol het gevormde brood heel voorzichtig door de tarwegries of semolina om te voorkomen dat het vast plakt aan de Romertopf. Leg het brood nu met de naad naar beneden in de onderste helft van de Romertopf om verder te rijzen. Bedek de Romertopf met plastic en laat het brood rijzen tot het net niet twee maal zo groot is. Tegen het einde van de rijstijd kun je de oven vast voorverwarmen tot 220. gr. C.

Bestrijk de bovenkant van het brood met een mengsel van eigeel en melk en bestrooi het met de sesamzaadjes. Snijd het patroon in het brood. Houd het deksel van de Romertopf met de binnenkant even onder de kraan zodat het helemaal nat wordt. Laat het water er weer goed aflopen en zet het deksel vervolgens op de onderste helft van de Romertopf. Zet het geheel onder in de oven en haal na 20 minuten de deksel van de Romertopf af. Laat de onderste helft met het brood nog 20 minuten in de oven staan tot het brood gaar is. Haal de Romertopf uit de oven en kijk uit dat je hem op een niet te koude ondergrond zet anders barst de schaal. Haal het brood uit de Romertopf en laat het op een ijzeren rek afkoelen.

Het brood blijft vier dagen zacht en goed van smaak.
