Bread Baking Day 17 #


Potato buns

This is going to be my first time participating in Bread Baking Day. The invitation, this time by Lien, gives so much possibilities for creativity that I just couldn't resist.

Besides the bread dough and the potatoes, I wanted to make use of ingredients that I've already in my fridge. The rosemary however, came out of my small garden where it grows; even in winter. The recipe of the dough comes from one of my favourite weblogs: 'in the kitchen with Arden'.



Bread dough

450 gr. bread flour

50 gr. polenta

5 gr. instant yeast

30 ml. good quality olive oil (plus 2 tbsp. extra)

310 ml. lukewarm water

10 gr. salt


Filling 1

cubes cooked potatoes
pesto genovese
crumbled soft goat cheese


Filling 2

cubes cooked potatoes

1 tbsp. italian herbs

garlic cloves (10 minutes softly simmered in milk)
pine nuts

rosemary; soft small twigs


In a big bowl; combine the bread flour, polenta, yeast, 30 ml. olive oil and water. Mix it long enough just to make a wet dough and leave it covered for 20 minutes. Add the salt and knead 10 minutes till you get a nice and soft dough.
Put the dough in a oiled bowl, cover it and let it rise till doubled in size. Depending on the temperature of the kitchen this can take 45 - 90 minutes.

In the meanwhile there's time for preparation of the filling.
When the dough has doubled in size, divide it in two equal parts. Roll out each part (on the counter) to a rectangle.

Using filling 1: cover most of the dough with a thin layer of pesto. Scatter the potato cubes and the goat cheese over it.

Using filling 2: Scatter the italian herbs, potato cubes, garlic cloves and pine nuts over it.


Roll both pieces of dough up like a cigarette. Cut each in thick slices and lay each slice opened on it's side.


The pictures speak for themselves.

Put a twig of rosemary in each slice with filling 2.


The slices can be put in round tins or even in muffin tins. If you don't have tins, just lay them on a piece of baking sheet. Leave all the buns to rise till almost doubled in size.
Drizzle some olive oil on each bun. Bake them in 20 - 25 minutes in the oven with a temperature of 410 dgr. F.(210 dgr. C.).


They're just gorgeous with a red wine.

Dit is voor mij de eerste keer dat ik het waag mee te doen met Bread Baking Day. De oproep van Lien is ook zo uitnodigend om eens lekker zelf wat te gaan proberen; daar kan ik geen weerstand aan bieden!

Op het brooddeeg en de aardappelen na, heb ik gewoon gekeken wat ik nog in mijn koelkast had. De rozemarijn komt uit ons super kleine tuintje en geeft zelf in de winter nog geur. Het recept van het brooddeeg is afkomstig van de weblog van Arden. Zelf vind ik het heerlijk om het brooddeeg helemaal zelf te maken maar als je dit niet wil, kun je natuurlijk ook witbroodmix gebruiken.

Brooddeeg
450 gr. broodmeel (Soezie wit b.d.)
50 gr. polenta
5 gr. gedroogde gist
30 ml. goede kwaliteit olijfolie (2 eetl. extra)
310 ml. handwarm water
10 gr. zout

Vulling 1
blokjes gekookte aardappel
pesto genovese
verkruimelde zachte geitenkaas

Vulling 2
Blokjes gekookte aardappel
1 eetl. gedroogde italiaanse kruiden
pijnboom pitten
knoflookteentjes 10. min. gesmoord in melk
topjes van rozemarijn


Meng in een grote kom het meel, polenta, gist, olijfolie en water. Vermeng het zodanig dat er geen droog meel meer is. Laat het nu afgedekt 20 minuten staan. Voeg het zout toe en kneed 10 minuten tot je een glad en zacht deeg hebt.

Leg het deeg in een geoliede kom en laat het afgedekt rijzen tot het volume is verdubbeld. Dit kan, afhankelijk van de omgevingstemperatuur, 45 tot 90 minuten duren.

Als het deeg genoeg is gerezen, deel je het in twee gelijke delen. Rol elke deel op de aanrecht uit tot een rechthoek.
Vulling 1: smeer pesto over het deegoppervlak, verdeel de aardappelblokjes en de geitenkaas erover.
Vulling 2: bestrooi het deeg met de kruiden en verdeel de aardappelblokjes, pijnboom pitten en knoflookteentjes erover.

Rol iedere deegplak op als een sigaret en snijd hem in niet te dunne schijven. Leg de schijven vlak in een muffinvorm (ik heb appelbollenvormpjes gebruikt) of leg ze op een bakplaat. Vouw het een klein beetje open en steek in de schijven met vulling 2 een topje rozemarijn. Laat de broodjes rijzen tot ze bijna twee keer zo groot zijn.

Verwarm de oven op 210 gr. C. Druppel wat olijfolie over de binnenkant van ieder broodje en bak ze in 20 - 25 minuten in de oven. Je huis ruikt heerlijk en ze smaken erg goed bij een glas rode wijn. De volgende dag zijn ze trouwens nog erg lekker en ze drogen niet zo snel uit door de aardappel.

Oh, these look good. A few years ago I had a "cinnamon roll"-like bun (swirled and filled)that had a savory filling - I think it was sundried tomatoes and cheese - and I have always wanted to experiment with recreating it. And I recently had the famous Sullivan Street pizza with potatoes in New York - so I know potatoes ON bread are as good as potatoes IN bread!
