Kanelbullar

Who doesn't like the smell of freshly baked bread? It seems to give most of us the feeling of a welcoming home. As if it tells you to come in, sit down, relax and eat.

The smell of baked bread should even help you selling your house. If that's correct, the following recipe must be very helpfull to the ones that want to sell their house during this economical crisis. Not only our house, but the entire block smelled like the kind of bakery one can only dream of.

We've tasted kanelbullar in Sweden a few times and they're quite different from the artificial sponges you buy at Ikea's foodshop.


This recipe of Family Pies reminds me of our holidays in our beloved second homeland Sweden.


Kanelbullar or Swedish cinnamon buns (makes 25)


Dough

150 gr. butter; melted

160 ml. milk; lukewarm

25 gr. instant yeast

1/2 tsp. salt

150 ml. caster sugar

800 gr. all purpose flour

2 tbsp. cardamom


Filling

125 gr. butter

150 ml. caster sugar

3 tbsp. cinnamon


Glaze

1 whisked egg

pearl sugar

In a large bowl: combine the flour, yeast, sugar, salt and cardamom. Add the melted butter and milk and knead the dough in 10 minutes.

Maybe the dough is still a bit sticky at this point but that's fine. Put the dough in an oiled bowl and cover it and leave it to rise till doubled in size. This can take 50 - 60 minutes depending of the temperature in your kitchen.


In the mean time you can prepare the filling. Melt the butter and add the cinnamon and sugar. Leave it to thicken at roomtemperature.


Handle the dough gently and divide it in two equal pieces. Roll each piece out into a thin rectangle. Cover the surface of each rectangle with the thickened filling, right up to the edges. Roll each rectangle up starting from the long side and cut into small slices. Place each slice in a muffin paper or cupcake case. Cover it and leave for the second rise. This can take 30 - 60 minutes.


Glaze the buns with the whisked egg and sprinkle with the pearl sugar. Bake them in 7- 9 minutes in the oven at a temperature of 210 dgr. C.

Don't you just love anything with cinnamon in it. These look so yummy! Good idea using the paper liners in the muffintin!!

Ik wilde vandaag dit recept maken, maar ik heb het idee dat de verhouding bloem-vocht niet klopt. 160 ml melk op 800 gram bloem geeft alleen maar droge kruimels. Moet het niet 400 gr bloem zijn? Kun je me daar a.u.b. mee helpen? Want het lijkt me toch wel erg lekker.

Sorry dat ik je zo lang heb laten wachten Loes. We zijn net een kleine week terug van de vakantie en een van onze dieren werd opeens ziek.
Maar nu je vraag over de verhouding bloem/ vocht in dit recept.
Ik zie wat je bedoelt. Ik denk dat het 600 gram bloem moet zijn en dat je de hoeveelheid vocht dan nog moet verdubbelen. Voeg niet in een keer alles toe zodat je altijd nog iets minder vocht kunt gebruiken dan de dubbele hoeveelheid. Het was een leuk klusje om te doen en het huis ruikt heerlijk. We hebben er een aantal ingevroren omdat ze erg machtig zijn en even opgepiept in de oven smaken ze nog erg lekker.

Bedankt voor je antwoord. Omdat ik niet langer op je antwoord wilde wachten heb ik met het vocht zelf maar wat aangerommeld. En ze waren inderdaad ontzettend lekker, voor herhaling vatbaar.
