Een taart met een barstje



Hij is niet bepaald moeders mooiste; ik weet het. Maar dat wordt dubbel en dwars goedgemaakt door de smaak en door de structuur van de taart wat ze tegenwoordig zo deftig het ‘mondgevoel’ noemen.

Nou, met dat mondgevoel zit het bij deze taart wel goed; ook met een heleboel monden vol. Hij heeft hier in huis niet lang gestaan en wordt beslist binnenkort weer gemaakt. En wat die barstjes betreft; die horen er gewoon in.

Gecraquelleerde perentaart

250 gr. bloem (plus 3 eetlepels extra die je even apart houdt)

310 gr. fijne kristalsuiker (plus 2 eetlepels extra die je ook nog even apart houdt?

1/8 theel. zout

50 gr. ongezouten roomboter; in kleine stukjes

185 ml melk

2 grote eieren

1 theel. amandelextract

geraspte schil van een citroen

1 eetl. bakpoeder

3 geschilde peren in stukjes gesneden

1 groot eiwit

Gebruik een springvorm van ongeveer 23 cm. Doorsnee

Verhit de oven tot 190 graden Celsius en vet de springvorm in. Een stuk bakpapier op de bodem leggen voordat je de ring sluit, voorkomt dat de cake later vast gaat plakken.

Verkruimel de bloem, kristalsuiker, zout en de boter tot je fijne kruimels hebt. Neem hier ongeveer 1 kop vanaf en vorm hiervan de bodem en de randen van de taart door de kruimels stevig aan te drukken in de springvorm.

Klop de melk, eieren, amandel extract, citroenschil, bakpoeder en de apart gehouden 3 eetlepels bloem. Voeg de overgebleven kruimels hieraan toe en roer even tot alles vermengd is maar meng het niet te fijn. Er moeten nog wat klontjes in zitten. Vouw de stukken peer hierin en stort het geheel in de springvorm.

Klop het eiwit tot het schuimig wordt en voeg de twee eetlepels suiker toe. Klop net zolang tot je pieken van het eiwit kunt vormen. Schep het voorzichtig in het midden van de taart en verspreid het daarvandaan voorzichtig als een dunne laag die het hele taartoppervlak bedekt.

Bak de taart ongeveer 65 minuten iets onder het midden van de oven. Laat het daarna 30 minuten afkoelen op een rek voordat de rand van de springvorm wordt verwijderd.

Pumpkinbread

Nooit spreken kleuren mij zo aan als in de herfst. Het vurig rood van de Japanse esdoorn of de kleine warm rode rozenbottels; alle nuances kom ik tegen tijdens mijn rondje trainen en ik geniet er volop van.

Het duurt allemaal maar kort en de struiken die het afgelopen weekend nog volop in blad stonden, beginnen nu al behoorlijk kaal te worden. De natte bladeren die de grond bedekken, houd ik extra goed in de gaten omdat ik geen zin heb om uit te glijden.

Na zo'n heerlijke training is het extra genieten van een kop hete thee met een dikke snee pumpkinbread. Met het oranje van de pompoen is het net alsof je buiten naar binnen hebt gehaald.




Dit recept vraagt wel wat voorbereiding maar het is niet moeilijk en het resultaat is heerlijk. Het lijkt erg op het pumpkinbread zoals je bij Starbucks kunt kopen.


Voor de pompoen puree kun je het volgende doen:
koop een pompoen zoals je ze bij de supermarkt ziet.
Snijd de pompoen doormidden en haal het draderige vlees en de pitten met een lepel eruit.
Verwarm de oven op 180 gr. C. en leg de pompoen helften ondersteboven op de bakplaat. Bak de pompoenen ongeveer 35 minuten in de oven. Het vruchtvlees moet zacht zijn en er gemakkelijk uitgeschept kunnen worden. Zodra het is afgekoeld prakken of pureren. Dit levert de hoeveelheid op die je nodig hebt voor het onderstaande recept.

Pumpkinbread (één voor de heb en één voor de geef)
250 ml zonnebloemolie
250 ml. water
2 cups pompoenpuree
4 eieren
590 gram suiker
465 gram bloem
2 theelepels dubbelkoolzure soda (baking soda)
1.5 theelepel zout
0.5 theelepel bakpoeder
4.5 theelepels pompoenkruiden (zie noot)
gehakte walnoten
handje gedroogde pompoenpitten

Noot: Pompoenkruidenmengsel (Judith Ryan Hendricks: Bread alone)
4 eetlepels gemberpoeder
4 eetlepels kaneel
3 eetlepels gemalen cardemom
3 eetlepels kruidnagelpoeder

Bekleed twee cakevormen met bakpapier en verwarm de oven voor op 180 Gr. C.

Als je het brood luchtig en niet te klef wil hebben volg je de volgende werkwijze:
Doe alle droge ingredienten bij elkaar in een kom en vermeng ze goed.
doe in een andere kom de olie, water en de pompoenpuree. Meng dit met de mixer in 2 minuten. Voeg nu de eieren een voor een toe en mix na ieder ei ongeveer 1 minuut. Voeg nu rustig het droge mengsel in drie delen toe en mix voorzichtig tot alles is geabsorbeerd. Voeg de gehakte walnoten toe.

Vul twee cakevormen met het beslag, bestrooi met de pompoenpitten en bak de 'broden' ongeveer 70 minuten in de oven. Test met een saté prikker of het ook echt gaar is voor je de broden uit de oven haalt. Laat eerst 20 minuten op een rooster goed afkoelen voor je de broden uit de vormen haalt. De eerste dag zijn ze al lekker maar de tweede dag zijn ze luchtiger en beter van smaak.

Roll over

Van sommige dingen weet je gewoon dat ze, ook al smaken ze misschien best wel redelijk, aan elkaar hangen van de synthetische troep.

Neem nu die opgerolde cakes die je goedkoop bij de supermarkten kunt kopen. Ze zijn mooi dun en het rode laagje jam zit er prachtig in en ze blijven, reuze handig, wel eeuwen zacht. Het Hollandse equivalent van de beruchte Amerikaanse Twinkie die na 20 jaar nog zacht en eetbaar blijkt te zijn.

Nu hoeft het hier in huis geen 20 jaar te blijven liggen; sterker nog.........het is weg voor je het weet! Als we dan eens die conserveringsmiddelen weglaten, de kleurstoffen overslaan, smaakstoffen met vakantie sturen en de emulgatoren vergeten? Wat houd je dan eigenlijk nog over? Een heerlijke zelfgemaakte Swiss roll gevuld met zachte creme van lemoncurd met slagroom en verse frambozen.

Swiss roll met lemoncurd en frambozen
6 eieren; gescheiden
150 gram witte basterdsuiker
50 gram bloem; gezeefd
30 gram poedersuiker

3 + 4 eetlepels lemon curd
150 ml slagroom; lobbig geklopt
frambozen
extra poedersuiker

Verwarm de oven op 180 graden Celsius. Bekleed een bakplaat met ingevet bakpapier.

Klop de eidooiers met de mixer of de kitchen-aid tot ze lichter van kleur worden en iets dikker. Voeg de suiker toe en mix nog even maar doe dit niet te lang. Voeg nu voorzichtig de bloem toe en schep het door het beslag tot het goed is opgenomen.

Klop de eiwitten tot er stijve pieken gevormd kunnen worden. Vouw de eiwitten voorzichtig door het dooierbeslag; houd het luchtig. Verspreid het mengsel op het ingevette bakpapier en spreid het met een spatel zodat het gelijkmatig verdeeld is. Bak het in ongeveer 15 tot 20 minuten.

Zodra je het bakblik uit de oven haalt, kun je er het beste een schone droge theedoek overheen leggen. Laat het zo rustig even afkoelen. In de tussentijd maak je een zachte gladde creme van de 4 eetlepels lemoncurd en de slagroom.

Zodra de cake helemaal is afgekoeld, snijd je de randen een beetje bij. Nu keer je het bakblik in een keer om boven een stuk keukenpapier dat bestrooid is met poedersuiker. Smeer voorzichtig met een paletmes de 3 eetlepels curd over de cake uit. Verdeel er daarna het curd-slagroom mengsel gelijkmatig en niet te dik overheen. Houd aan de randen zeker een centimeter vrij.

Rol de cake met behulp van de keukenpapier nu strak op. Het heeft wat weg van het rollen van shag tussen vloei. Trek het keukenpapier strak zodat ook de cake stevig opgerold wordt. Leg hem op de naad en bestrooi hem met poedersuiker. Snijd hem in mooie plakken en leg hem op een strategische plek, oftewel; in het zicht. Wedden dat deze geen 20 jaar blijft liggen?

Een goede start

De feestdagen zijn nu echt helemaal voorbij en vanaf morgen wordt alles weer 'normaal'. School en werk zullen dan weer een groot deel van ons dagritme bepalen.


Hardlopen zit er vandaag niet in. Volgens de boeken kun je met chi-running niet uitglijden als je de techniek goed beheert. Ik gok het er maar niet op; het is zelfs zo glad dat het uitlaten van de hond meer op de schuifelmars in de kerk lijkt.

Een mooie smoes om mijzelf te 'troosten' met het bakken van deze heerlijke appelcake. Hij verveelt ons nooit en vraagt weinig tijd. Een goede start.

Mary Berry's appelcake
2 grote goudrenetten; geschild en in stukjes gesneden
citroensap van een halve citroen
350 gr. zelfrijzend bakmeel
2 theelepels bakpoeder
350 gram witte basterdsuiker
4 eieren
1 theelepel amandelaroma
225 gram boter (gesmolten)
amandelschilfers

Verwarm de oven vast voor tot 180 graden C. Bekleed een bakblik van ong. 30 x 23 cm. met bakpapier.

Meng de appels met het citroensap. (Zelf heb ik hierbij iets minder dan een halve citroen gebruikt en als je het nog te zuur vindt, kun je gerust een theelepel suiker toevoegen)
Vermeng het gezeefde bakmeel met het bakpoeder en de basterdsuiker in een grote mengkom. (ik kwam 100 gram basterdsuiker te kort en heb dit aangevuld met rietsuiker; zonder problemen)

Meng in een andere kom de eieren en het amandelaroma in één keer en mix dit even goed. Voeg dit mengsel toe aan het droge mengsel in de grote mengkom en voeg daarna de gesmolten boter toe. Vermeng alles even en klop het heel even met de mixer. Het moet net lang genoeg zijn om een mooi beslag te krijgen.

Stort de helft van dit beslag in het bakblik en bedek dit met de appelstukjes. Stort hierover weer de andere helft van het beslag. Maak het jezelf niet te moeilijk: als niet alle stukje appel goed zijn bedekt. In de oven komt dit vanzelf in orde. Bestrooi met de geschaafde amandelen en bak het geheel ongeveer 45 minuten in het midden van de oven.

Laat het 15 minuten op een rek afkoelen en haal het voorzichtig uit het bakblik om verder af te koelen. Heerlijk met een dot slagroom of een bolletje vanille ijs. Voor de puristen onder ons; hij is van zichzelf al geweldig lekker.

A fine excuse for baking this appletraybake. It doesn't take much time and we never get bored eating it.


Mary Berry's applecake
450 gr. cooking apples; peeled and sliced
juice of 0.5 lemon
350 gr. selfraising flour
2 teasp. baking powder
350 gr. caster sugar
4 eggs
1 teasp. almond essence
225 gr. melted butter
flaked almonds


Pre-heat the oven tot 350 dgr. F. Base line a roasting tin ( 12 x 9 in) with greaseproof paper. Combine the apple and lemon juice. In a large bowl: combine the sifte flour, baking powder and sugar. In another bowl: mix the eggs and the almond essence. Add the egg-almondmixture to the flourmixture and add the melted butter as well. Mix well.

Spread half of this batter into the tin and cover it with the apples. Top with the rest of the mixture. Don't worry if the mixture doesn't cover the apple; this will work out fine in the oven. Sprinkle over the almonds. Bake in the oven for about 45 minutes or until the cake is golden. Leave to cool on a rack for 15 minutes and then turn out and remove the paper. Enjoy it with whipped cream or ice cream. For the purists: it's good enough without that.

Cherry crumble pie

Sometimes there isn't much time for making a pie or a cake but the cravings can't be ignored. One of my favourite recipes is this cherry crumble pie. It's not much of an effort to take care all the ingredients are on stock.


Cherry crumble pie
125 gr. self rising flour
125 gr. light brown caster sugar
65 gr. oatmeal (the one you use for the porridge)
100 gr. butter; melted
1 can cherry piefilling (430 gr.)
1/4 tsp. cinnamon
1 tsp. lemon juice

Preheat the oven to 350 dgr. F.(175 dgr. C.)

Combine the self rising flour, caster sugar and oatmeal. Add the melted butter and rubb with your fingertips till you get a crumble dough. Use 2/3 of this mixture to cover the bottom of a round baking tin.


Stir the cinnamon and lemon juice through the cherry piefilling. Spread this over the layer of crumble dough. Take the remaining crumble dough and sprinkle this over the piefilling mixture. Bake the pie in the middel of the oven in 50 to 60 minutes golden brown. Leave it for cooling down on an iron rack. Enjoy it with a big spoon full of whipped cream.

Keep on dreaming

Having a big allotment garden has been one of my dreams for a long time now. To harvest your own grown tomatoes, beetroot and all kind of beans must be terrific.

I know exactly how it must look like: a combination of flowers like roses, sweet pea and sunflowers among vegetables like carrots, tomatoes and beans. It will be a little paradise for bees, bumblebeels and butterflies. There's no traffic noise and when you're quiet you can hear the buzzing bees.

One thing that may not be missing is a big appletree loaded with blossom during spring time and apples (goudrenetten) during the autumn. Just the perfect apples to make applesauce and applecakes.

OK, it's still a dream but who knows? Till that dream comes true I buy every winter a lot of goudrenetten and make my own applesauce and apple cakes.

Apple cake
150 gr. butter, soft
150 gr. muscovado sugar
2 eggs
2 egg yolks
2 egg whites; stiffly beaten
200 gr. all purpose flour
100 gr. almonds; ground
1 sachet vanilla sugar (8 gr.)
1 1/4 tsp. backing powder
a pinch of salt
4 apples
100 gr. apricot jam
juice of one lemon

Mix the jam and lemon juice and push it through a sieve.

Make the cake batter by beating the butter and muscovado sugar. Add two of the eggs plus the two egg yolks one by one and mix thoroughly. Add 3 tbsp. lukewarm water.

Sieve the flour and add it to the batter. Add the almonds, salt, vanilla sugar, backing powder and egg whites. Scoop it carefully through the batter.

Peel the apples and slice them in four. Make a few slices in every piece of apple but don't slice completely through.

Put the batter in a 11" round baking pan (buttered) and make a nice pattern in the batter with the apple pieces. Cover the batter and apples with half of the apricot lemon mixture.

Bake the cake in the oven in 50 minutes at a temperature of 320 dgr. F. (160 dgr. C.) Be carefull not to burn the cake because of the layer with apricot and lemon. Cover the cake with the remaining apricot lemon mixture.

Al heel lang droom ik ervan om een grote moestuin te hebben. Om je eigen gekweekte tomaten, bietjes en allerlei bonen te oogsten moet geweldig zijn.

Ik weet ook precies hoe het er uit gaat zien: bloemen als rozen gecombineerd met lathyrus en zonnebloemen tussen de groenten als worteltjes, tomaten en bonen. Het is een paradijs voor bijen, hommels en vlinders.

Natuurlijk is er geen verkeerslawaai en als je heel stil bent, kun je het gezoem van de bijen horen.

Iets dat er in ieder geval niet aan mag ontbreken is een grote appelboom vol met bloesem in de lente en appels in de herfst. Goudrenetten; de lekkerste appels voor de appeltaart en appelmoes.

OK. het is nog steeds een droom maar wie weet? Tot het zover is koop ik ieder winter ladingen goudrenetten en maak mijn eigen appelmoes en appeltaart.

Appeltaart
150 gr. zachte boter
150 gr.basterdsuiker
2 eieren
2 eigelen
2 eiwitten; stijf geslagen
200 gr. patent bloem
100 gr. gemalen amandelen
1 zakje vanillesuiker
1 1/4 theel. bakpoeder
vingergreep zout
4 goudrenetten
100 gr. abrikozenjam
sap van 1 citroen

Vermeng de jam en het citroensap en druk het door een fijne zeef.

Maak het cakebeslag door de boter en de suiker te kloppen tot het licht van kleur is. Voeg de twee eieren één voor één toe en klop tussentijds. Voeg de twee eigelen toe en klop nog even goed. Voeg nu twee eetlepels handwarm water toe.

Zeef de bloem en voeg deze toe aan het beslag. Voeg de gemalen amandelen, zout, vanillesuiker, bakpoeder en als laatste de eiwitten toe. Schep dit voorzichtig door het beslag.

Schil de appels en ontdoe ze van het klokhuis. Snijd de appels in vieren en maak met een mes op de bolle kant van de appelparten insnijdingen zonder volledig door te snijden.

Doe het beslag in een springvorm met een doorsnede van 28 cm.. Bedek de bodem met een stuk bakpapier en vet de vorm in. Doe het beslag in de springvorm en leg de appelparten met de ingesneden kan naar boven in een mooi patroon in de springvorm. Bedek zowel de appels als het beslag voorzichtig met de helft van het abrikozen-citroenmengsel.

Bak de taart in de oven op 160 gr. C. in ongeveer 50 minuten tijd. Pas op dat de taart niet verbrandt door de suiker in de glazuur. Haal de taart uit de oven en bedek de warme taart nog een keer met de rest van het abrikozen- citroen mengsel.

This is it

This has to be the ultimate chocolate cake ever.

From the very first moment I saw Lynn's recipe of this chocolate cake, I just knew I had to make it.


Last weekend, with all the ingredients available, I'd planned baking this promising cake.


I was so confinced having both the acquired round cake pans. OK, you've guessed it already. The chocolate was chopped, the butter and eggs were at roomtemperature and at the same moment there seemed to be only one cake pan.

Lucky for me, our youngest was just near the shops. A quick mobile call and a few minor instructions later, I expected him back any moment. Well, moments became hours and he came back with a very expensive square cake pan.

Still longing to bake this cake I choose a bigger round cake pan and used almost all the batter at once. Instead of 30 minutes, the baking took about 50 minutes and I feared for a dry pancake flat cake.
How wrong was I. The surface of the cake looked a bit like the craters of the moon but the cake was light and had the perfect chocolate taste. The frosting was nice to work with and made it just perfect.

My two men in the house loved it and I think this will be their favourite chocolate cake ever. Thanks Lynn!!

As kids grow older they'll increase the distance to the elderly nest. At least, my kids do. But during their little excursions they're still thinking of home.


While standing on one of the platforms of the Eiffeltower, a few lovely espresso cups caught the eye of our youngest and he thought of me.


Isn't that nice? Instead of buying a little souvenir for himself, he bought them for me. And now they've got their own place on my espresso machine and seem to be the perfect background for madeleines.

Madeleines don't need a lot of ingredients and effort but you've got to start an hour and a half before you actually want to start baking.


Madeleines

90 gr. butter of good quality

1 tbsp. clear honey

2 eggs

75 gr. fine sugar

90 gr. flour; Italian 00

dusting sugar

Melt the butter and leave it for cooling down. Just before you're going to make the batter, mix the butter and honey. Beat the eggs, sugar and a pinch of salt with the electric handmixer till the batter gets the thickness of mayonaise. This will take 5 minutes.


Sift the flour above the batter and spoon the flour very carefully through the batter. Add the butter-honey mixture and stir it thoroughly but carefully. Leave the batter in the fridge for a rest.


After an hour, you can take the batter out of the fridge and leave it for 30 minutes at roomtemperature. The batter has become thick and foamy.

Preheat the oven till 410 dgr. F.(210 dgr. C.). Butter the madeleine molds. Fill the molds with just one tbsp. of batter.
Bake the madeleines 5 - 10 minutes. How long it exactly will take depends not only on your oven but on your molds as well. Silicon molds take longer than iron molds. Leave them on an iron rack for cooling down and dust with sugar.

Easy peasy


Some recipes are just so simple and the result is so delicious!

Take this recipe of Bara Brith; you don't need butter, it doesn't have to rise and there's almost no chance of failure. You can change it by choosing special teablands or combinations of dried fruits. I added a left-over of candied orangepeel and a few dried cranberries.


Bara Brith is traditionally Welsh and it means 'speckled bread'.


Bara Brith


175 gr. currants

175 gr. sultanas

225 gr. light muscovado sugar

300 ml. strong hot tea

275 gr. selfraising flour

1 egg, beaten


Use a loaf tin (900 gr.)

Start one night ahead and soak the dried fruits with the sugar in the strong hot tea.

The next morning; pre-heat the oven to 300 dgr. F. (150 dgr. C.).
Add the beaten egg and the selfraising flour to the fruits and teamixture and mix it thoroughly. Turn the mixture in the loaf tin (with greased greaseproof paper) and level the surfase. Bake in the oven for about 90 to 100 minutes until well risen and firm to the touch. Leaf it for 10 minutes in the tin before turning out and leaving on a wire rack. Slice it like bread and butter it if you like.

Yule Wreath

To me, Christmas is the most wonderful time of the year. Full of plans and ideas, I'm always lacking in time. Why are there just 24 hours in a day when I need more? Besides decorating the tree and the house, baking bread and doing the shoppings for the Christmasdiner, I want to sit on the couch with a book and a big mug with warm chocolate. There never seems enough time for doing all those things I long for these days.


Just at such a moment Lynn announced a new challenge of the Bread Baking Babes; the Yule Wreath. To me, a wreath sounds more like that mole on the witches nose but alah..............why not give it a try. Just a good moment to use the mincemeat I made last year.

I've to admit, the dough was very 'obedient' and the rising time wasn't to long for such a rich dough (1,5 hour). Rolling out the dough, I made a part of it to thin so there came some cracks in it. Nevertheless, it wasn't a very difficult challenge and I'm looking forward to make a savoury one with pesto, olives and cheese in it. Mouthwatering.



Recipe
  • 475 grams all purpose flour
  • 1,5 tsp. instant yeast
  • 240 ml. milk; lukewarm
  • 1/4 cup sugar
  • 60 grams unsalted butter
  • 1 egg
  • 1/2 tsp. cardamom

Filling

  • Mincemeat
In a large bowl; combine 2 cups of the all-purpose flour, sugar, yeast, cardamon, butter, egg and the milk. Mix it till it's a smooth dough and add the rest of the flour.

Knead the dough in 5 minutes till a nice not-sticky dough. For this, I've used my kitchenaid and that worked out very well. Place the dough in a greased bowl and let it rise till it's doubled in size. That will take about 1 to 1,5 hour.

Take the dough out of the bowl and push the air out of it; flatten it and roll it into a rectangle of 15 x 9 inches. I've made mine to big and that's why the dough was to thin a several places!










Spread the filling over the dough to 1/4 inch at the edges. Roll up very tightly and pinch the edge into the roll to seal the dough. Stretch the roll to make it even. Seal the edges down and lay it into a circle on a greased cookie sheet. Pinch the edges together to close the circle.





Use the scissors or a knife to make every 1-inch a cut, 2/3 of the way through the ring. Turn each section on it's side so you can see the innerside. For this, I used my doughscraper. Cover it with greased plastic and let is rise again until doubled in size. Depending on the temperature of the room, this will take about 40 - 60 minutes.

Till the end of the risingtime you can preheat the oven to 350 dgr. F. (180 dgr. C.) and bake the Yule until golden brown in 25 - 30 minutes. Let it cool down on a wire rack and decorate it with icing if you like.

Lemon semolina cake

Aah, the weekend. I do love the weekends. Everything you do is less hasty, more relaxed. More time for the family, more time for our pets and more time for reading and baking.

This weekend started with baking a cake without butter. Well, the cake doesn't contain butter but the lemon curd does. Looking at the picture you'll see that I'm not a very experienced baker because it looks a little bit messy. But this may not discourage you; it tastes light and fresh.

Lemon semolina cake

  • 3 eggs, separated
  • 100 gr. caster sugar
  • grated rind and juice of 1/2 lemon
  • 50 gr. fine semolina
  • 15 gr. ground almonds

Filling
  • 150 gr. whipping cream
  • 4 tbsp. lemon curd
  • 100 gr. fresh raspberries

Pre-heat the oven to 350 dgr. F. (180 dgr. F.). Grease and line a 20 cm. deep round cake tin with greaseproof paper.

Put the eggyolks and sugar into a bowl and whisk on full speed until pale and light in texture. Add lemon juice and continue whisking until the mixture is thick. Fold in the grated lemon rind, semolina and ground almonds.

Whisk the egg whites in a separate (and very clean) bowl until you can form soft peaks. Fold the egg whites into the mixture very carefully. Turn the mixture into the prepared tin.

Bake in the oven for about 30 minutes. It should become well risen and pale golden brown. Give it a few minutes rest and remove the paper and the tin and let it completely cool down.

Cut the cake in half horizontally. Whisk the cream and fold in the lemon curd. Sandwich the cake together with the cream mixture and raspberries. Dust the top with icing sugar.

Cranberry crumble coffee cake


Maybe the name suggests coffee to be one of the ingredients but the most important ingredient is the cranberry sauce. On this weblog you'll find the recipe for the sauce. Making it doesn't cost you a lot of time but it will give you so much more pleasure. I've found this recipe on the internet; what else?

Batter

* 1/4 cup chopped pecans

* 1 cup sugar

* 1/2 cup butter, softened

* 1 teaspoon vanilla extract

* 2 eggs

* 2 cups all-purpose flour

* 1 1/4 teaspoons baking powder

* 1/2 teaspoon baking soda

* 1/4 teaspoon salt

* 1 cup sour cream

* 1 cup whole berry cranberry sauce


Crumble topping

* 1/4 cup all-purpose flour

* 1/4 cup sugar

* 1/4 cup chopped pecans

* 1/4 teaspoon cinnamon

* 2 tablespoons cold butter


Grease a 9 in. springform and sprinkle the pecans over it. Cream the butter, sugar and vanilla in a mixing bowl and beat for 1-2 minutes on medium speed. Add eggs, one at a time; beating well after each addition.


Combine the all-purpose flour, baking powder, baking soda and salt. Add them to the batter alternately with the sour cream and mix well. Spread three cups of the batter over the pecans. Spoon the cranberry sauce over the batter and top with the remaining batter.


Make a crumble dough by combining flour, sugar, pecans and cinnamon and butter. Sprinkle it over the batter. Bake at 350 dgr. F (180 dgr. C) for 60-70 minutes or until a toothpick inserted near the center comes out clean. Cool it in the springform on a wire rack for 15 minutes; remove the sides of the form. Serve warm or cold; just as you like it.

Vanille chocolate traybake



Okay, so it's not a Picasso. Did Picasso bake cakes? No, but he surely would have if he'd had this recipe.

This cake is one of the lovely recipes written by Mary Berry in her 'Ultimate cake book'.
It looks wonderful marbled and is dense, soft and very easy to make.

Vanille chocolate traybake

  • 225 gr. soft unsalted butter
  • 225 gr. caster sugar
  • 275 gr. self-raising flour
  • 2 tsp baking powder
  • 4 eggs
  • 2 tbsp milk
  • 1/2 tsp vanilla essence
  • 1 1/2 tbsp cacao
  • 2 tbsp hot water
  • 50 gr. chocolate chips

Icing

  • 50 gr. plain chocolate, broken into pieces

  • 50 gr. white chocolate, broken into pieces


Pre-heat the oven to 180 dgr C. (350 dgr F.) Grease and base line a 12 x 9 in (30 x 23 cm) roasting tin with greased greaseproof paper.
Measure the margarine, sugar, flour, baking powder, eggs, milk and vanille essences into a large bowl and beat well for about 2 minutes. Spoon half the mixture into the tin and spread it over the bottom.

In another bowl, blend the cocoa with the hot water. Cool slightly and mix it with the remaining cake mixture and with the chocolate chips. Spoon the mixture in the plain cake mixture and spread it evenly on top.

Bake in the pre-heated oven for about 35 - 40 minutes or until the cake has shrunk from the sides. Leave it to cool in the tin. Melt the plain and white chocolate separately. Spoon into two separate small plastic bags, snip off the corner of the bags and drizzle the chocolates all over the top to decorate. Leave it to harden before cutting into squares.
